Saison Beers

Saison Beers

A Saison style beer is one that originated in the farmhouses of French speaking Southern Belgium.  A Saison is brewed in the spring and summer to be consumed in the fall during the harvest.  Farmers would brew this Saison (French for seasonal) style of beer to serve to their field workers during the harvest.  Since this beer was to be consumed during a hot work day it needed to be refreshing while light enough to ensure that the field workers wouldn't become intoxicated and unable to work.

Saison style beer was born out of necessity.  In the times prior to refrigeration it was difficult to brew beer in the warmer summer months as the yeast would become inactive at higher temperatures and the grain would not ferment.  Saison yeasts were discovered to allow for fermentation up to 90 degrees F, and the Saison was born.

Saisons tend to be lighter in color, slightly spicy and acidic with a tart, dry finish.
